  • ⅛ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • 2 ounces (56g) dark or semi-sweet chocolate, chopped
  • Flaky sea salt (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper.
  2. Brown the butter: Place 3 tablespoons of butter in a small skillet or saucepan over medium heat. Stir constantly until the butter melts, foams, and turns golden with brown specks at the bottom (about 3-4 minutes). Remove from heat immediately and pour into a medium mixing bowl. Let cool for 2-3 minutes.
  3. Combine the sugars and butter: Add granulated sugar and packed brown sugar to the warm browned butter. Whisk vigorously until smooth and looks like wet sand (about 30 seconds).
  4. Add the egg yolk and vanilla: Drop in the egg yolk and vanilla extract. Whisk until the mixture becomes thick, glossy, and falls in ribbons from the whisk (about 1 minute).
  5. Mix the dry ingredients: In a small separate bowl, whisk together flour, baking soda, and salt until no clumps remain.
  6. Fold in the dry ingredients: Add the flour mixture to the wet ingredients. Use a rubber spatula to fold gently just until no streaks of flour remain. Do not overmix.
  7. Add the chocolate: Gently fold in the chopped chocolate. Reserve a few pieces to press onto the tops of the dough balls later.
  8. Portion the dough: Use a cookie scoop or tablespoon to scoop out 6 equal portions (about 1.5 tablespoons each). Roll into balls and place on the prepared baking sheet, spacing 2 inches apart.
  9. Top with extra chocolate (optional): Press reserved chocolate pieces onto the tops of each dough ball.
  10. Bake: Place the baking sheet in the preheated oven. Bake for 9-11 minutes. For softer cookies, bake 9 minutes; for crispier edges, bake 11 minutes. Edges should be golden brown and set, centers puffy and slightly underdone.
  11. Cool on the baking sheet: Remove from oven and let cookies rest on the hot baking sheet for 5 minutes.
  12. Transfer to a cooling rack: After 5 minutes, carefully move cookies to a cooling rack. If using, sprinkle a tiny pinch of flaky sea salt over each warm cookie.
  13. Wait (if you can): Let cool for at least 5 more minutes before serving to allow the chocolate to set.

Don’t skip browning the butter—it adds a nutty, caramelized flavor. Weigh your ingredients for best results. Room temperature egg yolk emulsifies better. Chilling the dough for 30 minutes produces thicker, chewier cookies. Store in an airtight container at room temperature for up to 3 days.
