This banana bread is incredibly tender, deeply caramel-flavored, and absurdly moist, thanks to a happy accident with browned butter. The one-bowl method makes it easy and foolproof, delivering a sophisticated loaf that’s perfect for any occasion.

  • 1/2 cup (1 stick) unsalted butter
  • 3 medium ripe bananas (about 1 1/2 cups mashed)
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or pecans, or 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease the ends.
  2. In a light-colored skillet or saucepan over medium heat, melt the butter. Swirl occasionally. After 4-5 minutes, the butter will foam, then subside, and golden brown specks will form. When it smells nutty and turns warm amber, remove from heat and pour into a large mixing bowl. Let cool for 5 minutes.
  3. Add the bananas to the bowl with the cooled butter and mash with a fork until mostly smooth with a few lumps.
  4. Add granulated sugar, brown sugar, egg, and vanilla extract. Whisk until smooth and glossy.
  5. Sprinkle flour, baking soda, and salt over the wet mixture. Fold gently with a rubber spatula until just combined. If using add-ins, fold them in now.
  6. Pour batter into the prepared loaf pan and spread evenly. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool in the pan on a wire rack for 15 minutes, then lift out using parchment handles and cool completely on the rack before slicing.

Notes

For best results, use very ripe bananas with brown spots. Do not over-mix the batter. Let the bread cool completely before slicing to avoid crumbling. The bread stays moist for up to 4 days at room temperature when wrapped tightly.
