  • ½ cup (1 stick) unsalted butter, melted
  • ¼ cup vegetable oil
  • ¾ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped walnuts
  • Optional: Pinch of cinnamon or nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until you have about 1 ½ cups. Small lumps are okay.
  3. Add the melted butter, vegetable oil, granulated sugar, and brown sugar to the bananas. Whisk vigorously for about 1 minute until smooth and combined.
  4. Crack the eggs into the bowl and add the vanilla extract. Whisk until fully incorporated and the mixture looks glossy.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Gently combine with a whisk until just combined; do not overmix. Stop as soon as no dry flour is visible.
  6. Gently fold in the chopped walnuts using a silicone spatula, scraping the bottom and sides to ensure even distribution.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use the ripest bananas possible for maximum sweetness. Do not overmix the batter once flour is added to avoid a dense texture. Toasting walnuts beforehand enhances flavor. If using a glass pan, lower oven temperature by 25°F. For gluten-free, use a 1:1 GF flour blend. For dairy-free, substitute butter with coconut oil or vegan butter.
