Instructions

  1. In a medium bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Set aside.
  2. In a large bowl, beat 1 cup softened unsalted butter with 1 cup granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  3. Beat in 2 large eggs, one at a time, then stir in 2 teaspoons vanilla extract.
  4. Gradually add the flour mixture in two batches, mixing on low speed just until incorporated. Avoid overmixing.
  5. Divide dough into two discs, wrap in plastic, and chill for at least 1 hour or overnight.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.

  11. Divide icing into separate bowls and tint with gel colors: yellow for pencil bodies, pink for erasers, black for tips, green for metal ferrules.
  12. Use piping bags with small round tips for precise lines and flooding techniques. Let each layer dry 15-20 minutes before adding details.
  13. Allow decorated cookies to dry at room temperature for several hours or overnight before storing in airtight containers.
