A quick and easy 30-minute dinner featuring bone-in, skin-on chicken thighs seared in a cast-iron skillet and roasted with garlic butter for crispy skin and juicy meat.

  • 4–6 bone-in, skin-on chicken thighs (6–8 oz each)
  • 2 tbsp vegetable oil or avocado oil
  • 1 tsp kosher salt (or to taste)
  • 1/2 tsp freshly cracked black pepper
  • 2 tbsp all-purpose flour
  • 4 tbsp unsalted butter
  • 6–8 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken thighs completely dry with paper towels. Season both sides generously with kosher salt and black pepper.
  3. Lightly dust chicken thighs with flour, shaking off any excess.
  4. Heat vegetable oil in a large cast-iron skillet over medium-high heat until shimmering and just starting to smoke.
  5. Place chicken thighs in the pan skin-side down. Sear for 5-6 minutes without moving until skin is golden brown and crispy.
  6. Flip chicken and sear the other side for 2 minutes.
  7. Reduce heat to medium. Add butter, minced garlic, and thyme to the pan. Cook for 1 minute, stirring constantly, until fragrant.
  8. Tilt pan and baste chicken with the garlic butter mixture repeatedly.
  9. Transfer skillet to the preheated oven and roast for 15-20 minutes until internal temperature reaches 165°F (74°C).
  10. Remove skillet from oven. Transfer chicken to a plate.
  11. Place skillet back on stove over medium heat. Add chicken broth and lemon juice, scraping up browned bits. Simmer for 2 minutes until sauce thickens.
  12. Pour sauce over chicken, garnish with parsley and lemon wedges, and serve immediately.

Notes

Ensure chicken skin is completely dry before searing to maximize crispiness. Do not overcrowd the pan; cook in batches if necessary. Let chicken rest for 5 minutes after cooking to redistribute juices. For a gluten-free version, skip the flour dusting. For a dairy-free version, use olive oil instead of butter.
