  • For the Espresso Streusel Topping:
  • 1/3 cup all-purpose flour
  • 1/3 cup packed light brown sugar
  • 1 tablespoon finely ground espresso powder (or instant coffee granules)
  • 1/4 cup cold unsalted butter, cubed
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray and line with parchment paper.
  2. Brown the butter in a small saucepan over medium heat, stirring frequently until golden brown and nutty, about 5 minutes. Remove from heat and cool for 5 minutes.
  3. In a large bowl, combine mashed bananas, browned butter, granulated sugar, and brown sugar. Stir until smooth. Beat in eggs one at a time, then add vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon if using. Gently fold the dry ingredients into the wet ingredients until just combined.
  5. Prepare the espresso streusel by mixing flour, brown sugar, and espresso powder in a small bowl. Add cold cubed butter and crumble with fingers or a pastry cutter until coarse crumbs form.
  6. Pour the batter into the prepared loaf pan and smooth the top. Evenly sprinkle the espresso streusel over the batter, pressing lightly to adhere.
  7. Bake for 55-65 minutes, checking at 55 minutes with a toothpick inserted in the center; it should come out with a few moist crumbs.
  8. Cool the loaf in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

If the streusel browns too quickly, tent the loaf with foil halfway through baking. Use overripe bananas for best moistness and sweetness. Avoid overmixing the batter to keep the bread tender. Instant coffee granules can substitute espresso powder. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, substitute eggs with flax eggs and use coconut oil and dairy-free butter.
