  • Optional: 1 teaspoon Dijon mustard

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper. (5 minutes)
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side until golden brown. (7 minutes)
  3. In a small bowl, mix softened butter, minced garlic, fresh lemon juice, chopped parsley, thyme, and a pinch of red pepper flakes if using. Stir until combined. (5 minutes)
  4. Pour chicken broth into the bottom of the slow cooker. Place seared chicken breasts on top in a single layer. Spread the lemon herb butter mixture evenly over the chicken. (5 minutes)
  5. Cover and cook on LOW for 3-4 hours or on HIGH for 1.5-2 hours until chicken reaches an internal temperature of 165°F (74°C). Avoid opening the lid too often.
