These Sparkling New Year’s Eve Jello Shots are a festive, non-alcoholic treat that comes together in under 20 minutes of active prep. Made with sparkling cider and fresh fruit, they’re a crowd-pleasing party favorite that everyone can enjoy.

  • 3 packets (about 2 1/2 tablespoons) unflavored gelatin powder
  • 1/2 cup cold water
  • 2 cups sparkling cider or white grape juice
  • 1/4 cup granulated sugar
  • Fresh fruit for garnish (raspberries, blueberries, or pomegranate seeds)
  • Optional: edible glitter or gold leaf

Instructions

  1. Bloom the gelatin: In a small bowl, sprinkle 3 packets of unflavored gelatin over 1/2 cup of cold water. Let it sit for 5-10 minutes until thick and spongy.
  2. Heat the juice: In a small saucepan, combine 2 cups of sparkling cider and 1/4 cup of granulated sugar. Heat over medium-low, stirring occasionally, until the sugar dissolves and the mixture is warm but not boiling (around 140°F).
  3. Combine the gelatin and juice: Remove the saucepan from heat. Add the bloomed gelatin to the warm juice and whisk until completely dissolved, about 1-2 minutes.
  4. Cool slightly: Let the mixture sit for 5-10 minutes at room temperature, stirring occasionally to prevent a skin from forming.
  5. Pour into shot glasses: Arrange shot glasses on a baking sheet. Carefully pour the jello mixture into each glass, filling them about 3/4 full.
  6. Add the fruit garnish: While the jello is still liquid, drop 2-3 raspberries or a few pomegranate seeds into each glass. They will float to the top and set in place.
  7. Chill until set: Cover the baking sheet with plastic wrap and refrigerate for at least 4 hours, or overnight, until firm.
  8. Optional: Add edible glitter: Once set, sprinkle a tiny pinch of edible glitter on top of each shot.

Notes

Don’t boil the juice to preserve carbonation. Use cold water for blooming gelatin. Prepare the night before for best texture. Leave room at the top of the glasses for garnish. Fresh fruit garnish adds acidity to balance sweetness.
