  • 8 to 10 strips Thick-Cut Bacon
  • 1 medium Yellow Onion, finely diced
  • ½ cup Brown Sugar
  • 2 tablespoons Yellow Mustard
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Black Pepper, freshly ground
  • Salt, to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook bacon strips in a large skillet over medium heat for 8-10 minutes until crispy but not burnt. Remove to a paper towel-lined plate, leaving the fat in the pan.
  3. Add diced onions to the hot bacon fat and sauté for 5 minutes until soft and translucent.
  4. In a large mixing bowl, combine drained beans, brown sugar, mustard, Worcestershire sauce, apple cider vinegar, smoked paprika, and black pepper. Stir to coat evenly.
  5. Chop the crispy bacon into small pieces.
  6. Add the chopped bacon and sautéed onions to the bean mixture and stir gently to combine.
  7. Pour the mixture into a 9×13 inch baking dish and spread evenly.
  8. Bake for 45 minutes to 1 hour, until the sauce is bubbling and thickened.
  9. Remove from oven and let rest for 10 minutes before serving.

Notes

For best results, do not rush the bacon; it must be crispy. Taste the sauce before baking as flavors mellow during cooking. If the sauce is too thin, bake for the full hour or use a cornstarch slurry. Can be made ahead and refrigerated, or cooked in a slow cooker on low for 4-6 hours.
