  • ½ cup heavy cream (120 ml), warmed
  • 1 teaspoon sea salt
  • 1 large egg, beaten (for egg wash)
  • Coarse sugar for sprinkling on top (optional)

Instructions

  1. Make the Salted Caramel Sauce (about 15 minutes): In a medium saucepan, heat sugar over medium heat, stirring constantly until it melts into a smooth amber color. Remove from heat, whisk in butter until melted. Slowly add warm heavy cream, stirring until smooth. Stir in sea salt. Set aside to cool.
  2. Prepare the Flaky Butter Crust (10-15 minutes + chilling): In a large bowl, whisk together flour, sugar, and salt. Add cold butter cubes and cut into flour until mixture resembles coarse crumbs with pea-sized bits. Gradually add ice water, one tablespoon at a time, mixing gently until dough just comes together. Form dough into two discs, wrap in plastic, and chill for at least 30 minutes.
  3. Make the Apple Filling (10 minutes): Toss diced apples with brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and a pinch of salt. Let sit briefly.
  4. Roll Out Dough and Assemble Pies (20 minutes): Preheat oven to 375°F (190°C). Roll one dough disc to ¼ inch thickness. Cut circles with 4-5 inch cutter. Place a heaping tablespoon of apple filling in center, drizzle about a teaspoon of salted caramel sauce on top. Brush edges with beaten egg, fold dough over to form half-moon, press edges with fork to seal. Repeat with second disc.
  5. Finishing Touches and Baking (20-25 minutes): Place pies on parchment-lined baking sheet. Brush tops with egg wash, sprinkle coarse sugar if desired. Bake 20-25 minutes until golden and bubbling. Cool on rack at least 10 minutes before serving.
