These quick Thanksgiving sugar cookies with maple cream frosting are soft, tender, and topped with a rich maple frosting made with real maple syrup. Ready in about 30 minutes, they’re the perfect last-minute dessert for Thanksgiving week.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened (for frosting)
  • ¼ cup pure maple syrup
  • 2 cups powdered sugar, sifted
  • 1–2 tablespoons heavy cream or milk
  • Pinch of salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes. Scrape down the sides halfway through.
  3. Add the egg and vanilla extract. Beat until just combined. The mixture may look slightly curdled.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed or stirring by hand until just combined. The dough will be soft and slightly sticky.
  6. Use a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, until edges are lightly golden but centers still look slightly soft. Let cookies rest on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  8. While cookies cool, make the frosting: Beat the softened butter in a medium bowl until smooth and creamy, about 1 minute. Add the maple syrup and beat until combined. Gradually add the sifted powdered sugar, beating on low speed. Add 1 tablespoon of cream or milk and beat on medium-high for 2 minutes until light and fluffy. Adjust consistency with additional cream or powdered sugar as needed.
  9. Once cookies are completely cool, spread a generous amount of frosting on each cookie (about 1 tablespoon per cookie). Optionally top with flaky salt, chopped pecans, or cinnamon. Let frosting set for about 15 minutes before serving or stacking.

Notes

For best results, use pure maple syrup, not pancake syrup. The cookies can be stored in an airtight container at room temperature for up to 3 days. Unfrosted cookies freeze well for up to 3 months. The frosting can be made up to 3 days ahead and refrigerated.
