  • 1 medium head broccoli, cut into bite-sized florets
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce (optional but recommended)
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil (can substitute with canola or avocado oil)
  • 1 teaspoon brown sugar
  • Pinch of red pepper flakes (optional)
  • 2 stalks green onions, sliced thinly (separate white and green parts)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions

  1. Prep the veggies: rinse broccoli and cut into bite-sized florets. Peel and mince garlic cloves, grate fresh ginger, and slice green onions thinly, separating white and green parts.
  2. Mix the sauce: in a small bowl, combine soy sauce, oyster sauce, brown sugar, and red pepper flakes if using. Stir until sugar dissolves. In a separate bowl, mix cornstarch with water to create slurry. Set both aside.
  3. Cook the ground beef: heat vegetable oil in a large skillet or wok over medium-high heat. Add ground beef, breaking it up with a spatula. Cook until browned and no longer pink, about 5 to 7 minutes. Drain excess fat if needed. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  4. Add broccoli: toss broccoli florets into the pan with beef. Stir-fry for 3 to 4 minutes until broccoli is bright green and tender-crisp. If using frozen broccoli, cook 1 to 2 minutes longer.
  5. Combine with sauce: pour soy and oyster sauce mixture over beef and broccoli. Stir well to coat evenly. Add cornstarch slurry and stir continuously until sauce thickens, about 1 to 2 minutes.
  6. Finish: drizzle sesame oil over stir-fry and toss in sliced green parts of green onions. Stir once more and remove from heat.
  7. Serve immediately over steamed rice or quinoa.

Notes

Use tamari instead of soy sauce for gluten-free. Swap ground beef with ground turkey, chicken, or plant-based crumbles for variations. Avoid overcooking broccoli to keep it tender-crisp. Add splash of water or broth if sauce is too thick. Pre-chopped broccoli can save time but dry well before cooking.
