  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 medium yellow onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Small handful fresh parsley, chopped
  • Optional: red pepper flakes
  • Optional: lemon wedges

Instructions

  1. Prep your ingredients: finely chop the yellow onion and mince the garlic cloves. Halve the cherry tomatoes and slice the pitted Kalamata olives. Crumble the feta cheese and chop the fresh parsley.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering but not smoking.
  3. Add the chopped onion and cook until translucent and slightly golden, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds, being careful not to brown it.
  4. Add the ground turkey to the skillet, breaking it up with a spoon or spatula. Cook until no longer pink, about 7-8 minutes, stirring occasionally. Season with salt, pepper, smoked paprika, and oregano as it cooks.
  5. Stir in the halved cherry tomatoes and sliced olives. Cook for another 3 minutes until tomatoes soften and release some juices.
  6. Remove the skillet from heat and sprinkle crumbled feta cheese evenly over the top. Let it sit for a minute to soften the cheese. Garnish with chopped fresh parsley and red pepper flakes if using.
  7. Serve warm, optionally squeezing fresh lemon juice over the top.

Avoid overcrowding the pan when browning the turkey to get better texture. Add salt and spices early to develop flavor. Use cherry tomatoes for better texture and sweetness. Let feta sit on top without stirring to create creamy pockets. Add a splash of water or broth if turkey sticks to the pan.
