Instructions

  1. Cook the bacon: Place the 6 slices of bacon in a cold skillet. Turn the heat to medium and cook for 6-8 minutes, flipping once, until crispy. Transfer the bacon to a paper towel-lined plate to drain. Once cool enough to handle, crumble or chop into small pieces. Reserve about 2 tablespoons of the bacon fat in the skillet.
  2. Sauté the aromatics: In your large pot, heat 1 tablespoon of the reserved bacon fat over medium heat. Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the broth and potatoes: Pour in the 4 cups of chicken broth and add the diced potatoes, salt, pepper, and smoked paprika. Stir everything together. Increase the heat to high and bring the mixture to a boil, about 5-7 minutes.

  6. Add the milk, butter, and sour cream: Return the pot to low heat. Stir in the milk, butter, and sour cream. Whisk gently until the butter is melted and everything is well combined. Let it warm through for about 2-3 minutes — do not let it boil.
  7. Taste and adjust: Give the soup a taste and adjust seasonings as needed. Add more salt, pepper, or smoked paprika if desired.
