Quick Apple Cider Mimosas with Easy Cinnamon Sugar Rims

A quick and easy fall mimosa recipe featuring a perfect 2:1 ratio of dry champagne to fresh apple cider, with a spiced cinnamon sugar rim that adds a warm, festive touch. Ready in under 5 minutes, it’s ideal for brunch, Thanksgiving, or cozy weekend mornings.

  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup or honey
  • 4 ounces chilled champagne or sparkling wine (dry brut)
  • 2 ounces chilled apple cider (unfiltered, refrigerated)
  • 1 tablespoon apple brandy or Calvados (optional)
  • Ice cubes (optional, large cubes preferred)
  • Fresh apple slices or cinnamon sticks for garnish

Instructions

  1. Prepare the cinnamon sugar mixture: In a small bowl, combine 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon. Whisk with a fork until evenly combined. Set aside.
  2. Prep the glass rims: Pour 1 tablespoon maple syrup onto a small plate. Dip the rim of a champagne flute into the maple syrup, rotating gently to coat about a quarter-inch of the rim. Let excess drip off.
  3. Apply the cinnamon sugar: Immediately dip the syrup-coated rim into the cinnamon sugar mixture, rotating gently for even coverage. Tap the glass lightly to remove excess sugar. Let the rim dry for about 30 seconds.
  4. Add the apple cider: Pour 2 ounces of chilled apple cider into the prepared glass. If using apple brandy, add it now.
  5. Top with champagne: Slowly pour 4 ounces of chilled champagne or sparkling wine down the side of the glass to preserve bubbles.
  6. Add ice (optional): Add 2-3 large ice cubes if desired.
  7. Garnish and serve: Add a thin apple slice or cinnamon stick to the glass. Serve immediately.

Notes

Chill all ingredients beforehand for best results. Use dry brut champagne to avoid excess sweetness. The rim can be prepared up to an hour ahead if allowed to dry completely. For a mocktail, substitute champagne with non-alcoholic sparkling apple cider or sparkling water.
