  • 1/2 cup mayonnaise (high-quality brand like Hellmann’s or Duke’s)
  • 1 tablespoon Dijon mustard
  • 12 teaspoons apple cider vinegar
  • 1 teaspoon smoked paprika (plus extra for garnish)
  • 1/2 teaspoon garlic powder
  • Sea salt and black pepper (to taste)
  • Chives or parsley (for garnish)
  • Bacon bits (optional)

Instructions

  1. Place eggs in a single layer in a saucepan and cover with cold water by about an inch. Bring to a rolling boil over high heat.
  2. Once boiling, reduce heat to medium-low and simmer for exactly 12 minutes for large eggs.
  3. Immediately transfer eggs to a bowl of ice water and let sit for at least 10 minutes to stop cooking and aid peeling.
  4. Tap the bottom of each egg to crack the shell, roll lightly to loosen, and peel starting from the wider end under running water if needed.
  5. Cut each egg in half lengthwise and scoop out the yolks into a mixing bowl.
  6. Mash the yolks finely with a fork until they are in fine crumbs.
  7. Add mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, pepper, and half of the smoked paprika to the mashed yolks.
  8. Mix gently with a fork until smooth and creamy. Taste and adjust seasoning.
  9. Transfer the filling to a pastry bag or Ziploc bag with the corner cut off.
  10. Pipe the filling into the egg white halves, starting from the center and working outward.
  11. Sprinkle with remaining smoked paprika and garnish with chives, parsley, or bacon bits.
  12. Serve immediately or refrigerate for up to 24 hours.

Notes

Ensure eggs are fully cooled before peeling to prevent tearing. Do not overcook eggs to avoid a gray ring around the yolk. For best texture, mash yolks with a fork rather than a mixer. If making ahead, keep peeled whites and yolk mixture separate in the fridge for up to 2 days; fill eggs 30 minutes before serving to prevent soggy whites.
