Simple, healthy, and delicious no-bake energy balls made with rolled oats, peanut butter, and honey. These snacks are perfect for meal prep, provide sustained energy, and bring back nostalgic comfort.

Ingredients

  • Rolled Oats (old-fashioned)
  • Natural Creamy Peanut Butter
  • Ground Flaxseed
  • Honey
  • Vanilla Extract
  • Sea Salt
  • Dark Chocolate Chips (semi-sweet)
  • Chia Seeds

Instructions

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, chia seeds, and a pinch of salt. Mix to distribute the salt evenly.
  2. Add the creamy peanut butter, honey, and vanilla extract to the dry mixture. Stir with a silicone spatula until well combined. The mixture should look like a sticky dough.
  3. Check consistency by rolling a small amount in your hands. If it crumbles, add more peanut butter; if too wet, add more oats.
  4. Scoop about a tablespoon of the mixture and roll between your palms to form smooth balls. Place them on a parchment-lined baking sheet.
  5. Optionally, press a few dark chocolate chips into the top of each ball for decoration.
  6. Refrigerate the baking sheet for at least 30 minutes to allow the balls to firm up.
  7. Transfer the chilled energy balls to an airtight container for storage.
