Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Wash and trim a medium zucchini, then shred it using a box grater or food processor. If watery, squeeze out excess moisture.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer or whisk until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the mashed bananas and vanilla extract until combined.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula until just combined.
  7. Fold in the shredded zucchini gently but thoroughly.
  8. Pour the batter into the prepared loaf pan and smooth the top. Tap the pan lightly to release air bubbles.
