  • 2 large eggs, room temperature

  • ½ cup (130g) peanut butter, creamy or chunky
  • ¾ cup (130g) chocolate chips, semi-sweet or dark
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan thoroughly or line it with parchment paper.
  2. In a medium bowl, mash 3 ripe bananas with a fork until mostly smooth but with a few lumps left for texture. Set aside.
  3. In another bowl, whisk together 1 ¾ cups (220g) all-purpose flour, 1 tsp baking soda, ½ tsp salt, and optional ½ tsp cinnamon.
  4. In a large bowl, beat ½ cup (115g) softened unsalted butter and ¾ cup (150g) granulated sugar with an electric mixer or whisk by hand until light and fluffy, about 3 minutes.
  5. Beat in 2 large eggs, one at a time, then stir in 1 tsp vanilla extract and the mashed bananas until just combined.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula. Stop when no flour streaks remain to keep the bread tender.
  7. Gently fold in ¾ cup (130g) chocolate chips, saving a small handful for topping if desired.
  8. Microwave ½ cup (130g) peanut butter for 20-30 seconds to soften slightly; it should be spreadable but not too runny.
  9. Pour half of the banana bread batter into the loaf pan, dollop half of the softened peanut butter over it in spoonfuls, then add the remaining batter on top.
  10. Use a butter knife or skewer to swirl the peanut butter through the batter gently, creating marbled patterns without fully mixing it in.
  11. Sprinkle the reserved chocolate chips on top for a pretty finish.
  12. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs but no wet batter. Tent with foil midway if the top browns too quickly.
  13. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
