  • ½ cup unsalted butter, cold and cubed
  • ¼ cup powdered sugar
  • ¼ teaspoon salt
  • ½ cup pure maple syrup (Grade B or dark amber)
  • ½ cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons bourbon
  • 1 cup pecan halves, toasted
  • ¼ cup all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving overhangs on two sides, and grease lightly.
  2. In a food processor, pulse 1 ½ cups flour, powdered sugar, and salt to mix. Add cold cubed butter and pulse in short bursts until the mixture resembles coarse crumbs with pea-sized butter pieces.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared pan. Bake for 15 minutes until lightly golden. Remove and let cool slightly. Lower oven temperature to 325°F (160°C).
  4. In a large bowl, whisk eggs until smooth. Add maple syrup, brown sugar, vanilla, and bourbon. Whisk vigorously until combined and glossy.
  5. Whisk in the ¼ cup flour until no lumps remain. Stir in the toasted pecan halves.
  6. Pour the filling over the pre-baked crust, spreading gently to cover the edges.
  7. Bake for 35-40 minutes until edges are bubbling and set, and the center has a slight jiggle but is not liquid.
  8. Cool completely in the pan on a wire rack for at least 2 hours before lifting out and slicing into squares.

Notes

Toast pecans in a dry skillet for 3-4 minutes before adding to the filling for enhanced flavor. Ensure butter is cold for a flaky crust. Do not skip pre-baking the crust to prevent sogginess. Bars must cool completely to set properly. For gluten-free, use a 1:1 gluten-free flour blend.
