These Lighter Maple Bourbon Pecan Pie Brownies are a happy accident turned into a new favorite dessert. They feature a fudgy brownie base with a gooey maple-bourbon pecan topping that sinks in to create pockets of sticky, boozy caramel.

  • 1/2 cup unsalted butter, melted
  • 1/2 cup plain Greek yogurt, at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup pecan halves, roughly chopped
  • 1/3 cup pure maple syrup
  • 2 tablespoons bourbon
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 tablespoon brown sugar, packed
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 8×8 baking pan with parchment paper, leaving some overhang on two sides.
  2. Make the brownie base: In a medium bowl, whisk together the melted butter and Greek yogurt until smooth. Add the sugar and whisk for about a minute until slightly lighter in color. Crack in the eggs one at a time, whisking well after each. Stir in the vanilla.
  3. Add the dry ingredients: Sift the cocoa powder, flour, salt, and baking powder into the wet mixture. Fold gently with a rubber spatula until just combined.
  4. Pour the batter into the prepared pan and spread it evenly. Set aside.
  5. Make the pecan topping: In a small bowl, whisk together the maple syrup, bourbon, melted butter, egg, brown sugar, vanilla, and salt until smooth. Stir in the chopped pecans.
  6. Pour the topping over the brownie base and spread evenly, making sure the pecans are distributed.
  7. Bake for 30-35 minutes. The edges should look set and slightly pulling away from the pan, but the center will still have a slight jiggle. A toothpick inserted in the center should come out with a few moist crumbs.
  8. Cool completely in the pan on a wire rack for at least 2 hours, or refrigerate for 30 minutes.
  9. Lift out using the parchment overhang and cut into 16 squares.

Notes

Room temperature ingredients are important for a crackly top. Don’t skip the parchment paper for easy removal. For the most even bake, position your rack in the middle of the oven. Let brownies cool completely before cutting to prevent the pecan layer from sliding off.
