  • 4–6 lb boneless turkey breast
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh sage, chopped
  • 4–5 cloves fresh garlic, minced
  • 1 large yellow onion, roughly chopped
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Kosher salt and freshly cracked black pepper to taste
  • Optional: Red pepper flakes or lemon zest

Instructions

  1. In a small bowl, combine softened butter, chopped thyme, rosemary, sage, minced garlic, salt, and pepper. Mix into a cohesive paste and set aside.
  2. Pat the turkey breast dry with paper towels. Heat olive oil in a large skillet over medium-high heat. Sear the turkey for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. Place chopped onions in the bottom of a 6-quart slow cooker. Pour in chicken broth. Place the seared turkey on top of the onions.
  4. Slide some of the herb butter under the skin and breast if possible. Rub the remaining herb butter all over the outside of the turkey.
  5. Cover and cook on low for 6-8 hours (or high for 4-5 hours) until the internal temperature reaches 165°F (74°C).
  6. Remove turkey from slow cooker, tent with foil, and let rest for 15 minutes before slicing against the grain.

Notes

Ensure the turkey is completely dry before searing to achieve a good crust. Do not open the slow cooker lid frequently during cooking. If using frozen turkey, thaw completely in the refrigerator first. Leftovers can be stored in the fridge for up to 4 days or frozen for 3 months.
