A manageable and elegant bone-in turkey breast roasted with a rich herb butter emulsion, ensuring moist meat and crispy skin without the stress of a whole bird.

  • 1 bone-in turkey breast (4 to 5 pounds)
  • 1 cup unsalted butter, softened
  • 2 large sprigs fresh rosemary, needles stripped and finely chopped
  • 1 large bunch fresh thyme, leaves stripped
  • 10–12 leaves fresh sage, finely chopped
  • 6 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1 large lemon, halved
  • 1 large yellow onion, quartered
  • 1 cup chicken stock

Instructions

  1. Preheat oven to 325°F (165°C). Remove turkey from fridge 30 minutes before cooking and pat dry with paper towels.
  2. In a small bowl, mix softened butter, chopped rosemary, thyme, sage, minced garlic, salt, and pepper until it forms a cohesive paste.
  3. Gently slide fingers under the turkey skin to create pockets, being careful not to tear the skin.
  4. Push handfuls of the herb butter under the skin, spreading it evenly over the meat. Rub the remaining butter all over the outside of the turkey.
  5. Rub the outside with olive oil. Season generously with more salt and pepper. Stuff the cavity with the halved lemon and quartered onion.
  6. Place the turkey breast seam-side down in a roasting pan. Roast in the preheated oven without opening the door for the first hour.
  7. After the first hour, baste the turkey with its own juices and chicken stock. Repeat basting every 30 minutes.
  8. Insert a meat thermometer into the thickest part of the breast, avoiding the bone. Cook until the internal temperature reaches 160°F (71°C).
  9. Remove from oven and transfer to a cutting board. Tent loosely with foil and let rest for at least 20 minutes before carving.

Notes

Pull the turkey at 160°F as residual heat will carry it to 165°F. Use a rack in the roasting pan to allow air circulation; if you don’t have one, use the quartered onions as a natural rack. Do not use non-stick roasting pans if you want good browning. For dairy-free, swap butter for olive oil or vegan butter. For gluten-free, ensure chicken stock is certified gluten-free.
