A tender, juicy meatloaf made with a blend of ground beef and pork, featuring a tangy-sweet caramelized glaze. This easy weeknight dinner is simple to prepare and delivers classic comfort food flavor.

  • 1/2 lb (225g) Ground Pork
  • 1 cup (100g) Plain dried breadcrumbs
  • 1/2 cup (120ml) Whole milk
  • 2 large Eggs, room temperature
  • 1 medium Onion, finely grated
  • 3 cloves Garlic, minced
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Dijon Mustard
  • 1.5 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Fresh Parsley, chopped
  • 1/2 cup (120g) Ketchup
  • 1/4 cup (50g) Brown Sugar, packed
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Dijon Mustard
  • 1/2 tsp Garlic Powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line a rimmed baking sheet with foil.
  2. In a large bowl, combine milk and breadcrumbs. Let sit for 5 minutes to create a panade.
  3. Add eggs, grated onion, minced garlic, Worcestershire sauce, 1 tbsp Dijon mustard, salt, pepper, and parsley to the milk mixture. Whisk until combined.
  4. Add ground beef and ground pork to the bowl. Gently mix with hands until just incorporated. Do not overmix.
  5. Transfer mixture to the prepared pan or baking sheet and shape into a tight loaf.
  6. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, 1 tsp Dijon mustard, and garlic powder to make the glaze.
  7. Bake the loaf uncovered for 45 minutes.
  8. Remove from oven and spoon the glaze evenly over the top. Return to oven.
  9. Bake for another 15-20 minutes until internal temperature reaches 160°F (71°C) and glaze is caramelized.
  10. Remove from oven and let rest for 10 minutes before slicing to allow juices to redistribute.

Notes

Do not overmix the meat to avoid a tough texture. Ensure vegetables are finely grated so they blend seamlessly. Let the meatloaf rest for 10 minutes before slicing to keep it juicy. If the glaze burns, tent with foil for the last 10 minutes.
