  • 1 large cucumber, thinly sliced
  • ¼ small red onion, thinly sliced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup cooked quinoa or mixed greens like kale or spinach (optional bowl base)

Instructions

  1. Marinate the chicken: In a medium bowl, combine 2 tablespoons olive oil, minced garlic, lemon juice, dried oregano, ground cumin, salt, and pepper. Add the chicken breasts or thighs and toss to coat evenly. Cover and refrigerate for at least 15 minutes, or up to 2 hours.
  2. Prepare the tzatziki sauce: Grate half a cucumber using a box grater, then place it in a fine mesh sieve or cheesecloth and press out excess water. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, olive oil, salt, and pepper. Stir well and refrigerate until serving.
  3. Make the cucumber salad: Thinly slice 1 large cucumber and ¼ small red onion. Toss with chopped parsley, red wine vinegar, olive oil, salt, and pepper in a bowl. Let sit for at least 10 minutes.
  4. Cook the chicken: Heat a skillet or grill pan over medium-high heat. Add a teaspoon of olive oil if needed. Remove chicken from marinade and cook for 5-6 minutes per side or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.
  5. Assemble the bowl: Start with a base of cooked quinoa or fresh greens. Slice the rested chicken and arrange on top. Add dollops of tzatziki sauce and a scoop of cucumber salad. Garnish with extra dill or parsley if desired.

Notes

Marinate chicken for at least 15 minutes for best flavor and juiciness. Drain grated cucumber well to avoid watery tzatziki. Rest chicken after cooking to keep it juicy. If tzatziki is too thick, stir in a teaspoon of cold water or more lemon juice. Avoid overcrowding the pan when cooking chicken.
