  • 1 cup (225g) cottage cheese, preferably small-curd
  • 1 large egg, room temperature
  • ¾ cup (90g) all-purpose flour (or almond flour for gluten-free)
  • 2 tablespoons olive oil
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Freshly ground black pepper, to taste
  • 1 ½ cups (about 250g) cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar (optional)
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • Fresh basil leaves (optional, for garnish)
  • Grated Parmesan or mozzarella (optional, for cheesy finish)
  • Red pepper flakes (optional, for heat)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss the halved cherry tomatoes with 1 tablespoon olive oil, balsamic vinegar, minced garlic, and a pinch of salt and pepper. Spread evenly on a parchment-lined baking sheet. Roast for 15-18 minutes until softened and caramelized.
  3. While tomatoes roast, combine cottage cheese and egg in a mixing bowl. Whisk or fork to break down curds until mostly smooth with some texture.
  4. Add flour, baking powder, salt, and pepper to the cottage cheese mixture. Stir gently until just combined.
  5. Add 2 tablespoons olive oil to the batter and stir in.
  6. Line another baking sheet with parchment paper. Spoon batter onto sheet and spread into a rough circle or rectangle about ¼ inch (6 mm) thick.
  7. Bake flatbread for 12-15 minutes until edges are golden and surface is set but still soft.
  8. Remove flatbread from oven and spoon roasted tomatoes evenly over the surface. Add optional cheese if desired.
  9. Return to oven for another 5 minutes to melt cheese and warm toppings.
  10. Remove from oven, sprinkle with fresh basil and red pepper flakes if using. Let cool for a couple of minutes, then slice into wedges or squares and serve warm.

Notes

If batter is too wet, add a tablespoon more flour; if too dry, add a splash of water or milk. Do not overmix batter to avoid toughness. Roasting tomatoes is essential for flavor depth. Use parchment paper to prevent sticking. Baking times may vary by oven; watch for golden edges.
