  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 pound lean ground turkey (93% lean preferred)
  • 1 medium zucchini, finely diced
  • 1 small onion, finely chopped (yellow or white)
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce (no-sugar-added preferred)
  • 2 tablespoons fresh parsley or cilantro, chopped (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional: handful of chopped mushrooms or small grated carrot

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and scoop out the seeds and membranes. Set aside the tops if you want to chop them for the filling.
  3. Heat olive oil in a skillet over medium heat. Add chopped onions and garlic, cooking until fragrant and translucent, about 3-4 minutes. Add chopped pepper tops if using.
  4. Add ground turkey to the skillet. Break it apart and cook until no longer pink, about 6-8 minutes, stirring often to avoid sticking or burning.
  5. Mix in diced zucchini, smoked paprika, cumin, salt, and pepper. Cook for another 3-4 minutes until veggies soften slightly.
  6. Stir in tomato sauce and chopped parsley or cilantro, mixing well to keep the filling moist and flavorful.
  7. Spoon the turkey mixture evenly into each bell pepper cavity without overpacking.
  8. Place stuffed peppers upright in a baking dish. Cover loosely with foil and bake for 25 minutes.
  9. Remove the foil and bake for another 10 minutes to get a slight roast on the tops.
  10. Check that peppers are tender but still hold shape and the filling is hot throughout.
  11. Remove from oven and let the peppers rest for 5 minutes before serving.
