These fluffy ghost meringue cookies are a foolproof, gluten-free Halloween treat that is crisp on the outside and slightly chewy in the center. Made with simple ingredients like egg whites and sugar, they are perfect for spooky season celebrations.

  • 3/4 cup (150g) granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1/4 cup white chocolate chips
  • Black gel food coloring

Instructions

  1. Preheat oven to 200°F (95°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a clean, dry bowl, beat egg whites on medium speed until foamy (1-2 minutes). Add cream of tartar and continue beating on medium-high speed until soft peaks form.
  3. Slowly pour in granulated sugar, one tablespoon at a time, while mixer is running. Increase speed to high and whip for 3-5 minutes until stiff, glossy peaks form.
  4. Turn mixer off and gently fold in vanilla extract and cornstarch with a spatula.
  5. Transfer mixture to a piping bag fitted with a round tip. Pipe mounds for heads and drag down slightly to create tails. Leave space between cookies.
  6. Bake for 1.5 to 2 hours until dry to the touch and lift off parchment easily. Do not brown. Turn off oven and let cool inside with door cracked for 1 hour.
  7. Melt white chocolate chips in microwave in 30-second intervals. Mix in black gel food coloring. Use a toothpick to draw eyes and mouths on cooled cookies. Let set for 10 minutes.

Notes

Ensure egg whites are at room temperature and bowl is completely grease-free for best results. Use gel food coloring instead of liquid to prevent deflation. Store in an airtight container with a silica packet if humid. Do not refrigerate.
