  • 2 cups (250g) all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups (300g) wild huckleberries, fresh or frozen (if frozen, thaw and drain excess liquid)
  • 1 cup (200g) granulated sugar
  • 3 large eggs, room temperature
  • 1/2 cup (120ml) fresh lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest
  • 1/3 cup (40g) all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×13-inch pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large bowl, cream together 1 cup (226g) softened unsalted butter and 1/2 cup (100g) granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Slowly add 2 cups (250g) all-purpose flour and 1/4 teaspoon salt, mixing on low until just combined. The dough will be crumbly but should hold together when pressed.
  4. Press the dough evenly into the prepared pan, compacting it firmly.
  5. Bake the crust for 18-20 minutes until lightly golden on the edges. Remove from oven and let cool slightly.
  6. In a medium bowl, whisk together 3 large eggs and 1 cup (200g) sugar until frothy, about 2 minutes. Add 1/2 cup (120ml) fresh lemon juice and 1 tablespoon lemon zest.
  7. Whisk in 1/3 cup (40g) all-purpose flour and 1/4 teaspoon salt until smooth.
  8. Fold in 2 cups (300g) wild huckleberries gently to avoid breaking them.
  9. Pour the filling evenly over the pre-baked crust and return the pan to the oven.
  10. Bake for 25-30 minutes until the filling is set but slightly jiggly in the center.
  11. Remove from oven and cool completely on a cooling rack, then refrigerate for at least 2 hours before slicing.
  12. Use the parchment paper overhang to lift the bars out, then cut into squares with a sharp knife, wiping the knife clean between cuts.

Notes

If bars seem too soft after cooling, chill longer to firm up. Watch the filling while baking and tent with foil if browning too fast. For gluten-free crust, substitute almond flour. Vegan adaptation uses vegan butter and flax eggs. Frozen huckleberries work well if thawed and drained.
