  • 1 cup (240 ml) white vinegar (distilled preferred)
  • 1 cup (240 ml) water
  • 1 tablespoon pickling salt (kosher or pickling salt, avoid iodized)
  • 1 teaspoon granulated sugar
  • 1 teaspoon whole black peppercorns
  • Optional: ½ teaspoon mustard seeds or coriander seeds

Instructions

  1. Wash and dry cucumbers thoroughly. Slice into spears about 3-4 inches long or rounds.
  2. In a mixing bowl, combine white vinegar, water, pickling salt, and sugar. Stir until salt and sugar dissolve completely.
  3. Layer cucumbers, fresh dill sprigs, smashed garlic cloves, sliced jalapeños, and peppercorns into glass jars.
  4. Pour the brine over the cucumbers and spices, ensuring everything is submerged. Leave about half an inch of headspace.
  5. Seal jars tightly and shake gently to distribute brine. Refrigerate for at least 24 hours, preferably 48 hours for best flavor.
  6. After chilling, enjoy the pickles cold. If too salty or sour, add a splash of water before serving.
