Flavorful Smoky Hatch Green Chile Cheeseburger Casserole

A smoky, cheesy casserole featuring Hatch green chiles and ground beef, perfect for quick weeknight dinners with a bold southwestern twist.

  • 1 lb ground beef (80/20 preferred)
  • 1 can (4 oz) Hatch green chiles, roasted and diced
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 2 cups (200 g) shredded sharp cheddar cheese
  • 3 large eggs
  • 1 cup (240 ml) milk (whole or 2%, or almond milk for dairy-free)
  • 1 cup (100 g) breadcrumbs (preferably panko)
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with butter or cooking spray.
  2. Heat olive oil or butter in a large skillet over medium-high heat. Add diced onion and cook until translucent, about 4 minutes.
  3. Add minced garlic and sauté for another minute.
  4. Add ground beef, breaking it apart with a spatula. Cook until no pink remains, about 7-8 minutes. Drain excess fat if necessary.
  5. Stir in Hatch green chiles, Worcestershire sauce, salt, and pepper. Cook together for 2-3 minutes. Remove from heat and let cool slightly.
  6. In a medium bowl, whisk together eggs and milk until smooth. Add half of the shredded cheddar cheese and breadcrumbs, stirring to combine.
  7. Fold the beef mixture into the egg mixture gently, being careful not to overmix.
  8. Pour the mixture into the prepared baking dish, spreading evenly. Sprinkle remaining cheddar cheese on top.
  9. Bake for 25-30 minutes until the top is golden brown and bubbly and a toothpick inserted in the center comes out clean.
  10. Let the casserole rest for 5-10 minutes before serving.

Notes

If the top browns too quickly, tent loosely with foil halfway through baking. For extra spicy chiles, reduce amount or serve with sour cream or salad. Let casserole rest before slicing for easier serving. Ground turkey or chicken can replace beef; use gluten-free breadcrumbs for gluten-free version.
