Flavorful Grilled Peach and Burrata Salad with Prosciutto

A quick and easy summer salad featuring smoky grilled peaches, creamy burrata, and salty prosciutto, perfect for warm-weather meals and gatherings.

  • 3 large ripe peaches, halved and pitted
  • 8 ounces (225 grams) burrata cheese, room temperature
  • 6 ounces (170 grams) thinly sliced prosciutto
  • 4 cups (about 120 grams) arugula or mixed greens, lightly packed
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or reduction
  • A handful fresh basil leaves, torn (optional)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 375°F / 190°C).
  2. Rinse and dry the peaches, then cut each peach in half and remove the pit carefully. Brush the cut sides lightly with olive oil.
  3. Place the peach halves cut side down on the grill. Grill for 3-4 minutes without moving them to get grill marks. Flip and grill the skin side for another 2 minutes until tender but still holding shape.
  4. Place arugula or mixed greens in a large bowl. Drizzle with 1 tablespoon olive oil, fresh lemon juice, and season lightly with salt and pepper. Toss gently to coat evenly.
  5. Lay the dressed greens on a serving platter. Tear the burrata into rough chunks and scatter over the greens.
  6. Arrange the grilled peaches on top, cut side up.
  7. Fold or drape the prosciutto slices around the salad.
  8. Tear fresh basil leaves over the salad and drizzle with balsamic glaze.
  9. Sprinkle with coarse sea salt and freshly ground black pepper to taste. Serve immediately.

Notes

Use medium-high heat to avoid burning peaches. Brush peaches lightly with olive oil to prevent sticking. Take burrata out of fridge 20 minutes before serving for best creaminess. Assemble salad immediately after grilling peaches to maintain texture. Balsamic glaze can be homemade by reducing balsamic vinegar. For vegetarian version, omit prosciutto and add toasted nuts.
