  • 3 cloves garlic, minced

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 tablespoon fresh lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Wooden or metal skewers (soaked in water if wooden)

Instructions

  1. Rinse and pat dry chicken thighs. Cut into 1-inch cubes.
  2. In a mixing bowl, whisk together honey, minced garlic, soy sauce, olive oil, chili flakes, smoked paprika, ground cumin, fresh lime juice, salt, and pepper until glossy and well blended.
  3. Add chicken cubes to the marinade, toss to coat, cover, and refrigerate for 20-30 minutes (up to 2 hours for deeper flavor).
  4. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread chicken pieces onto skewers, leaving space between chunks.
  5. Preheat grill or grill pan to medium-high heat (about 400°F).
  6. Grill skewers for 4-5 minutes per side, brushing with leftover marinade or honey glaze after flipping. Cook until internal temperature reaches 165°F and glaze is caramelized (about 10-12 minutes).
  7. Remove skewers from grill and let rest for 5 minutes before serving. Serve with fresh lime wedges and optional chopped cilantro or green onions.

Notes

Soak wooden skewers for at least 30 minutes to prevent burning. Brush glaze on during the last few minutes of grilling to avoid burning the honey. Use a meat thermometer to ensure chicken reaches 165°F for safe consumption. Marinate chicken up to 2 hours for deeper flavor but not longer to avoid meat breakdown. For gluten-free, substitute soy sauce with tamari. Adjust chili flakes to control heat level. Can bake at 425°F for 15-20 minutes or broil if no grill is available.
