Easy Vanilla Bean Peach Jam Recipe with Fresh Rosemary

A simple and quick homemade peach jam infused with vanilla bean and fresh rosemary, perfect for summer breakfasts and snacks.

  • 4 cups (600g) fresh peaches, peeled and sliced
  • 1 cup (200g) granulated sugar
  • 1 small sprig fresh rosemary, finely chopped
  • 1 whole vanilla bean, split and scraped
  • 2 tablespoons fresh lemon juice
  • 1/4 cup (60ml) water
  • Optional: 1 tablespoon pectin

Instructions

  1. Peel 4 cups (600g) of ripe peaches using a paring knife or by blanching in hot water for 30 seconds to loosen skins. Slice into roughly 1/2-inch (1.25 cm) pieces. This should take about 10 minutes.
  2. Split 1 vanilla bean lengthwise with a sharp knife and scrape out the seeds. Set both seeds and pod aside.
  3. In a large heavy-bottomed saucepan, combine the sliced peaches, 1 cup (200g) sugar, 1/4 cup (60ml) water, lemon juice, chopped rosemary, vanilla seeds, and the empty vanilla pod. Stir gently to mix. Bring to a simmer over medium heat, stirring occasionally. This will take about 8-10 minutes.
  4. Reduce heat to low and let the mixture bubble gently for 20-25 minutes. Stir every few minutes to prevent sticking. The peaches will soften and the liquid will thicken into a jam-like consistency. The jam thickens further as it cools.
  5. Test the set by placing a small spoonful on a chilled plate. If it wrinkles when pushed with your finger, it’s ready. If not, simmer a few minutes longer.
  6. Remove the vanilla pod and any large rosemary stems before bottling.
  7. Pour the hot jam into sterilized glass jars, leaving about 1/4 inch (0.6 cm) headspace. Wipe rims clean, seal tightly, and let cool to room temperature.

Notes

If jam is too runny, refrigerate overnight to firm up or cook longer next time. Adding pectin can help achieve a thicker set. Use fresh, ripe peaches for best flavor and texture. Vanilla extract can substitute vanilla bean if needed. Stir gently to avoid smashing peaches. Store jam refrigerated up to 3 weeks or freeze up to 6 months.
