This Easy Turkey Taco Lunchbox Bento Bowl is packed with seasoned ground turkey, fresh veggies, creamy avocado, and all the taco fixings you love—minus the mess of a traditional taco. It takes twenty minutes to throw together on a Sunday afternoon, and you’ve got lunches sorted for the whole week.

  • 1 lb ground turkey (93% lean)
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1/4 cup water
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • 1 can black beans (15 oz), drained and rinsed
  • 1/2 cup corn kernels
  • 1 cup shredded lettuce (romaine or iceberg)
  • 1 medium avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons sour cream
  • 2 tablespoons salsa
  • Fresh cilantro, chopped (optional)
  • 1 lime, cut into wedges

Instructions

  1. Cook the rice (if not already prepared): Cook 1 cup of dry rice according to package directions, about 15-18 minutes. Rinse rice before cooking for fluffier grains.
  2. Heat the skillet: Place a large skillet over medium-high heat and add 1 tablespoon of olive oil. Heat for about 30 seconds until it shimmers.
  3. Cook the turkey: Add the ground turkey to the skillet. Break it apart with a wooden spoon, stirring occasionally. Cook for 5-7 minutes until no longer pink and golden brown in spots.
  4. Season the meat: Reduce heat to medium-low. Sprinkle taco seasoning over the cooked turkey, then add 1/4 cup water. Stir until evenly distributed. Simmer for 2-3 minutes until sauce thickens slightly.
  5. Warm the beans and corn: Drain and rinse black beans. If using frozen corn, microwave for 1 minute to thaw. Optionally, add beans and corn to the skillet with turkey for the last minute to warm.
  6. Prep the fresh toppings: Dice avocado, halve cherry tomatoes, shred lettuce, and chop cilantro. Squeeze a little lime juice over avocado to prevent browning.
  7. Assemble the bento bowls: Divide cooked rice evenly among containers (about 1/2 cup per bowl). Add turkey taco meat to one compartment, black beans and corn to another, and arrange fresh toppings in remaining spaces.
  8. Add finishing touches: Sprinkle shredded cheese over turkey, add a dollop of sour cream and salsa, and garnish with fresh cilantro. Tuck a lime wedge into each container. Seal lids and refrigerate.

Notes

Don’t pack avocado directly against warm turkey to prevent browning. For best results, leave lettuce and avocado off until the night before or morning of eating. Let everything cool for 10-15 minutes before sealing containers to avoid condensation. These bowls taste best on day two or three as flavors meld.
