  • 1 teaspoon lemon juice or orange juice (for apple slices)
  • 1 small handful pretzel sticks or mini pretzels
  • 2 tablespoons yogurt-covered raisins
  • 1 small handful baby carrots or cucumber slices (optional)
  • 1 tablespoon dark chocolate chips (optional)
  • 1 teaspoon chia seeds or hemp seeds (optional)
  • 1/2 banana, sliced (optional)

Instructions

  1. If packing ahead, lightly toast the two slices of bread and let them cool completely.
  2. Spread 2 tablespoons of sunflower butter evenly on one slice of bread, going edge to edge.
  3. Spread 1 to 2 tablespoons of jelly or jam on the other slice of bread, also edge to edge.
  4. Press the two slices together, jelly side meeting sunflower butter side. Optionally, cut into shapes with a cookie cutter.
  5. Wash and slice the apple into thin wedges. Toss with lemon juice or orange juice to prevent browning.
  6. Arrange the bento box: place the sandwich in the largest compartment, apple slices in another, pretzels in another, and yogurt-covered raisins in the last. Add optional items like carrots, cucumber, chocolate chips, or banana slices as desired.
  7. If using a dipping cup for hummus or ranch, place it in a corner. Sprinkle chia or hemp seeds over the sandwich if desired.
  8. Seal the bento box tightly. If packing the night before, refrigerate. Add pretzels just before eating to maintain crunch.
