This creamy, spicy, and cheesy buffalo chicken dip is the ultimate set-it-and-forget-it game day appetizer. Made in a slow cooker with simple ingredients, it’s perfect for parties and guaranteed to disappear fast.

  • 2 cups cooked, shredded chicken (about 12 oz, rotisserie chicken works perfectly)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo hot sauce (recommended: Frank’s RedHot Original)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/4 cup crumbled blue cheese (optional)
  • 1/2 teaspoon garlic powder
  • For serving: tortilla chips, celery sticks, carrot sticks, or crusty bread

Instructions

  1. Prep the chicken: If using rotisserie chicken, remove skin and shred meat with two forks to get 2 cups. If cooking your own, boil two boneless, skinless chicken breasts in water for 15-20 minutes until cooked through, then shred.
  2. Soften the cream cheese: Let cream cheese sit at room temperature for 30 minutes. Alternatively, microwave in a bowl for 15-20 seconds, being careful not to melt it.
  3. Combine the ingredients: In a medium mixing bowl, add softened cream cheese, buffalo hot sauce, ranch dressing, garlic powder, and half of the shredded cheddar cheese. Use a hand mixer on low speed (or a wooden spoon) to blend until smooth and creamy.
  4. Add the chicken: Fold the shredded chicken into the cream cheese mixture until every piece is coated.
  5. Transfer to the slow cooker: Spray the inside of a 3-4 quart slow cooker with non-stick cooking spray. Transfer the mixture into the slow cooker and spread evenly.
  6. Top with cheese: Sprinkle the remaining shredded cheddar cheese and crumbled blue cheese (if using) over the top. Do not stir.
  7. Cook on low: Cover and cook on LOW for 2 hours. Do not cook on HIGH. After 1.5 hours, gently stir to ensure everything is melted and combined. The dip is ready when hot, bubbly, and the cheese on top is fully melted.
  8. Serve and enjoy: Switch the slow cooker to the ‘Warm’ setting. Serve directly from the slow cooker with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For best results, use full-fat cream cheese and let it soften before mixing. Do not cook on HIGH to avoid burning or separation. The dip can sit on warm for up to 4 hours. If it thickens, stir in a tablespoon of milk or extra hot sauce. Leftovers can be refrigerated for up to 4 days and reheated on the stovetop or microwave.
