  • ¼ cup granulated sugar
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon lemon juice (fresh is best)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • ½ cup salted caramel sauce, divided
  • 1 cup old-fashioned rolled oats (not quick oats)
  • ¾ cup all-purpose flour
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup unsalted butter, cold and cut into small cubes
  • Flaky sea salt for finishing (like Maldon)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish lightly with butter or non-stick spray.
  2. In a large bowl, combine the sliced apples, ¼ cup granulated sugar, 2 tablespoons brown sugar, lemon juice, 1 teaspoon cinnamon, nutmeg, and 2 tablespoons flour. Toss until apples are evenly coated. Let sit for about 5 minutes.
  3. Pour the apple mixture into the prepared baking dish and spread into an even layer. Drizzle half of the salted caramel sauce (about ¼ cup) over the apples. Do not stir.
  4. In a medium bowl, whisk together the oats, ¾ cup flour, ½ cup brown sugar, ¼ cup granulated sugar, ½ teaspoon salt, and ½ teaspoon cinnamon. Add the cold butter cubes. Using a pastry cutter, two forks, or your fingers, work the butter into the dry ingredients until the mixture resembles coarse sand with some pea-sized butter pieces remaining.
  5. Sprinkle the oat crumble evenly over the apples. Do not press it down.
  6. Bake for 35 to 40 minutes, or until the top is golden brown and the filling is bubbling around the edges. If the crumble browns too quickly, loosely tent with aluminum foil for the last 10 minutes.
  7. Remove from the oven and let cool on a wire rack for about 10 minutes. Drizzle the remaining salted caramel sauce over the top and sprinkle with flaky sea salt.
  8. Serve warm, preferably with vanilla ice cream or whipped cream.

Notes

For best results, use cold butter and do not overwork the crumble. Let the crisp rest for 10 minutes before serving to allow the filling to set. For a gluten-free version, substitute all-purpose flour with a gluten-free blend and use certified gluten-free oats. For a vegan version, use vegan butter sticks and dairy-free caramel sauce.
