Easy Rainbow Veggie Bento Box with Homemade Ranch Dip

A quick and easy lunch featuring a colorful array of fresh vegetables paired with a creamy homemade ranch dip. Perfect for meal prep, this bento box comes together in under 15 minutes and is packed with nutrients and flavor.

  • 1 red bell pepper, sliced into strips
  • 1 orange carrot, peeled and cut into sticks
  • 1 yellow bell pepper, sliced into strips
  • 1 green cucumber, sliced into rounds or half-moons
  • 1 cup purple cabbage, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup sugar snap peas, trimmed
  • 1 cup plain Greek yogurt
  • 1/4 cup buttermilk
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon lemon juice

Instructions

  1. Make the ranch dip: In a small mixing bowl, combine Greek yogurt, buttermilk, fresh dill, fresh parsley, garlic powder, onion powder, salt, black pepper, and lemon juice. Whisk until smooth. Let sit for 5 minutes while prepping veggies.
  2. Prep the red bell pepper: Wash, remove top and bottom, seeds, and membranes. Slice into thin strips about 1/4 inch wide.
  3. Prep the carrots: Peel and cut into sticks about 3 inches long and 1/2 inch thick.
  4. Prep the yellow bell pepper: Wash, remove top and bottom, seeds, and membranes. Slice into thin strips.
  5. Prep the cucumber: Wash and slice into rounds about 1/4 inch thick. Optionally cut into half-moons.
  6. Prep the purple cabbage: Remove wilted outer leaves. Cut into thin shreds about 1/8 inch wide.
  7. Prep the cherry tomatoes and snap peas: Halve the cherry tomatoes. Trim ends of snap peas and remove strings if present.
  8. Assemble the bento box: Place ranch dip in the smallest compartment. Arrange veggies by color in remaining compartments: red peppers, orange carrots, yellow peppers, green cucumbers and snap peas, purple cabbage.
  9. Add optional garnishes: Sprinkle fresh mint leaves or add a lemon wedge if desired.
  10. Store properly: Keep dip separate from veggies until ready to eat. Assembled boxes (without dip) stay fresh in the fridge for up to 4 days.

Notes

For best results, keep veggies dry after washing to prevent sogginess. The ranch dip improves after sitting overnight in the fridge. If you don’t have buttermilk, mix 1 tablespoon lemon juice or white vinegar with 1/4 cup milk and let sit for 5 minutes. Store dip separately from veggies until ready to eat.
