  • 2 tablespoons (30ml) pure maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ½ teaspoon (2ml) vanilla extract
  • Pinch of salt
  • Optional toppings: chopped pecans, walnuts, extra Greek yogurt, granola, dried cranberries

Instructions

  1. In a medium bowl, mash the pumpkin puree, pumpkin pie spice, cinnamon, and salt together with a fork or whisk until smooth and fragrant.
  2. Add the milk, Greek yogurt, maple syrup, and vanilla extract. Whisk until fully incorporated and creamy.
  3. Stir in the rolled oats and chia seeds with a spatula until every oat is coated. The mixture will look loose at first.
  4. Divide the mixture evenly among 4 (8-ounce) mason jars or airtight containers, filling each about three-quarters full.
