Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cut into small cubes
  • ¾ cup whole milk, cold
  • 1 large egg, lightly beaten
  • ½ cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • ¼ cup unsalted butter, very soft
  • 4 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
  • 23 tablespoons milk

Instructions

  1. Make the Dough: In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. Add cold cubed butter. Use a pastry cutter or fingertips to cut butter into flour until mixture resembles coarse crumbs with some pea-sized butter pieces.
  2. Add the Wet Ingredients: Pour in cold milk and beaten egg. Stir with a fork just until a shaggy dough forms. Do not overmix.
  3. Prepare the Filling: In a small bowl, mix brown sugar and cinnamon together. Set aside. Have ¼ cup very soft butter ready.
  4. Assemble the Bake: Turn dough out onto a lightly floured surface. Gently pat into a rectangle about ½-inch thick. Spread soft butter over dough, leaving a small border. Sprinkle cinnamon-sugar mixture evenly over butter.
  5. Roll and Cut: Starting from the long side, carefully roll dough into a log. Use a sharp knife to cut into 12 equal slices. Reshape if needed.
  6. Overnight Rest: Place slices cut-side up in a greased 9×13-inch baking dish. Cover tightly with plastic wrap and refrigerate for at least 8 hours, up to 12 hours.
  7. Bake: Next morning, remove dish from fridge while oven preheats to 375°F (190°C). Remove plastic wrap. Bake for 25-30 minutes until tops are golden brown and center is set. Let cool for 10 minutes in pan.
  8. Make the Glaze: Beat softened cream cheese and butter together until smooth. Add powdered sugar and vanilla, then whisk in milk one tablespoon at a time until pourable consistency.
  9. Glaze and Serve: Drizzle glaze over warm bake. Serve immediately.

Notes

Cold butter is essential for flakiness. Do not overmix the dough. The overnight rest is crucial for texture. Use a sharp knife for clean cuts. Let the bake cool for 10 minutes before glazing. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use cold vegan butter, oat milk, and a flax egg.
