This easy one-bowl banana bread is a lifesaver for last-minute bake sales, unexpected guests, or a comforting treat. No mixer required, just a bowl and a fork for a moist, tender loaf with a perfect crackly top.

  • 3 large ripe bananas (about 1 ½ cups mashed)
  • ⅓ cup unsalted butter, melted and slightly cooled
  • ½ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon (optional but highly recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps remaining (about 1 ½ cups).
  3. Add the melted butter, granulated sugar, egg, and vanilla extract to the mashed bananas. Whisk until well combined and smooth.
  4. Sprinkle the flour, baking soda, salt, and cinnamon over the wet mixture. Use a spatula or wooden spoon to gently fold until just combined—do not over-mix. A few lumps are fine.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly after 40 minutes, tent loosely with aluminum foil.
  7. Remove from the oven and let cool in the pan for 10 minutes. Then lift out using the parchment paper sling and transfer to a cooling rack to cool completely before slicing.

Notes

For dairy-free, substitute melted butter with melted coconut oil or avocado oil. For gluten-free, use a 1:1 gluten-free all-purpose flour blend. Over-mixing will make the bread tough; mix just until flour disappears. Use very ripe bananas (heavily speckled or black) for best sweetness and moisture. If using frozen bananas, thaw completely and drain excess liquid before mashing.
