These easy no-crust PB&J bites are a quick, kid-friendly lunch solution that takes under 10 minutes to make. Rolled flat and sealed, they’re bite-sized, mess-free, and perfect for picky preschoolers.

  • 8 slices of soft white bread (e.g., Sara Lee or Wonder Bread)
  • 1/2 cup creamy peanut butter (e.g., Jif or Skippy)
  • 1/4 cup strawberry jelly or jam (e.g., Smucker’s)
  • 1 ripe banana, mashed (optional)
  • 2 tablespoons cream cheese, softened (optional)
  • 1 tablespoon honey (optional)

Instructions

  1. Flatten the bread slices: Place one slice of bread on a piece of parchment paper. Use a rolling pin to gently roll over the bread until it’s about 1/4 inch thick. Repeat with all 8 slices.
  2. Spread the peanut butter: Take 4 flattened bread slices and spread a thin, even layer of peanut butter on each (about 1 tablespoon per slice), leaving a 1/4-inch border around the edges.
  3. Add the jelly: On top of the peanut butter, spread about 1/2 tablespoon of jelly or jam. If using mashed banana or cream cheese, add it now.
  4. Top with remaining bread: Place the other 4 flattened bread slices on top of the filled slices, pressing down gently to seal.
  5. Seal the edges: Use your fingers or the back of a fork to press down along the edges of each sandwich to seal them together.
  6. Cut into bites: Using a sharp knife or pizza cutter, cut each sandwich into 4 squares or triangles (or 6 pieces for smaller kids). Alternatively, use cookie cutters for fun shapes.
  7. Serve immediately or store: Arrange the bites on a plate or pack in a lunchbox. For storage, place in an airtight container with a paper towel to absorb moisture. Refrigerate for up to 3 days.

Notes

Use soft white bread for best results; avoid crusty breads. If bread is stale, microwave for 10 seconds to soften. Don’t overfill to prevent sogginess. Seal edges firmly to keep filling inside. Cut immediately after assembly for clean edges. Store in fridge with paper towel to absorb moisture; best within 3 days. Do not freeze.
