Quick, no-bake energy balls made with sunflower butter, oats, and pantry staples. Perfect for healthy lunchboxes and a fuss-free snack.

  • 1 cup sunflower butter (240 ml)
  • 1 ½ cups rolled oats (135 g)
  • ¼ cup honey (85 g) or maple syrup for vegan option
  • 2 tablespoons ground flaxseed (14 g)
  • 1 tablespoon chia seeds (12 g) (optional)
  • 1 teaspoon vanilla extract (5 ml)
  • ½ teaspoon ground cinnamon
  • ¼ cup mini dark chocolate chips (45 g) (optional)
  • Pinch of sea salt

Instructions

  1. Gather your ingredients and measure them out.
  2. In a mixing bowl, combine sunflower butter, honey, and vanilla extract. Stir until smooth and well blended, about 2-3 minutes.
  3. Add rolled oats, ground flaxseed, chia seeds, cinnamon, and sea salt. Fold together until thick and sticky. If crumbly, add a teaspoon of honey or a splash of water.
  4. Gently fold in mini chocolate chips if using.
  5. Scoop about 1 tablespoon (15 grams) of mixture and roll into balls between your palms. Makes about 20-24 balls.
  6. Place balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator and enjoy as needed.

Notes

Chill the balls for at least 30 minutes to help them hold their shape. If mixture is too wet to roll, refrigerate for 10 minutes before shaping. Toast oats lightly for extra flavor and crunch. Use room temperature ingredients for easier mixing. Store in airtight container refrigerated up to one week or freeze up to 3 months.
