These easy no-bake peanut butter oat bites are the perfect school birthday treat. Made with simple pantry staples, they come together in under 15 minutes and are always a crowd-pleaser.

  • 2 cups (180g) rolled oats
  • 1 cup (240g) creamy peanut butter, room temperature
  • 1/2 cup (170g) honey
  • 1/4 cup (28g) ground flaxseed
  • 1/3 cup (60g) mini chocolate chips
  • 1 teaspoon vanilla extract
  • Pinch of salt (if peanut butter is unsalted)

Instructions

  1. Combine the dry ingredients. In a large mixing bowl, add 2 cups of rolled oats and 1/4 cup of ground flaxseed. Stir together until the flaxseed is evenly distributed.
  2. Add the wet ingredients. Scoop 1 cup of room temperature peanut butter into the bowl. Drizzle 1/2 cup of honey over the top. Add 1 teaspoon of vanilla extract and a pinch of salt if using unsalted peanut butter. Do not add the chocolate chips yet.
  3. Mix thoroughly. Stir everything together with a wooden spoon or spatula. At first, it will look dry and crumbly. Keep stirring and pressing the mixture against the sides of the bowl. After about 2 minutes, it will come together into a cohesive, sticky dough.
  4. Let the mixture rest. Cover the bowl with a clean kitchen towel and let it sit for 5 to 10 minutes. This allows the oats to absorb the moisture, making the mixture less sticky and easier to roll.
  5. Fold in the chocolate chips. After the rest, add 1/3 cup of mini chocolate chips. Fold them in gently until evenly distributed.
  6. Roll the bites. Line a baking sheet with parchment paper. Using a cookie scoop or spoon, portion out about 1 tablespoon of the mixture. Roll it between your palms to form a smooth ball. If the mixture sticks, dampen your hands slightly with water. Place each bite on the parchment-lined sheet.
  7. Chill the bites. Place the baking sheet in the refrigerator for at least 30 minutes to firm up. For a quicker option, 15 minutes in the freezer works too.
  8. Store properly. Once chilled, transfer the bites to an airtight container. Keep refrigerated until ready to serve. They stay fresh for up to two weeks.

Notes

Let the mixture rest for 5-10 minutes before rolling to ensure the oats absorb moisture and the bites hold together. Wet your hands slightly if the mixture sticks while rolling. For nut-free classrooms, substitute peanut butter with sunflower seed butter and use certified nut-free chocolate chips and oats. For a vegan version, replace honey with 1/3 cup maple syrup. These bites can be frozen for up to three months.
