These Easy Monster Eye Cupcakes are a fun and forgiving Halloween treat that turns a kitchen disaster into a spooky win. Quick to make with simple ingredients, they feature moist chocolate cupcakes topped with vibrant buttercream frosting and googly candy eyes.

  • 3 large eggs, room temperature
  • 1/2 cup vegetable oil (canola or melted coconut oil)
  • 1 cup water (hot water for richer flavor)
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter, softened (Land O’Lakes recommended)
  • 4 cups powdered sugar, sifted
  • 2–3 tablespoons milk (whole milk preferred)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Red and blue food coloring (for monster green or pink)
  • 1 bag candy eyeballs (flat backs preferred)
  • Black decorating gel (for drawing monster mouths)
  • Optional: green sprinkles, black sanding sugar, or edible glitter

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with 24 paper liners.
  2. In a large bowl, combine cake mix, eggs, oil, water, and vanilla extract. Mix on low speed for 30 seconds, then medium for 2 minutes. Scrape sides halfway through.
  3. Fill each liner about 2/3 full using a cookie scoop for even portions.
  4. Bake for 18-22 minutes. Insert a toothpick into the center; if it comes out clean or with a few moist crumbs, they’re done. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  5. For frosting: Beat softened butter on medium speed for 2 minutes until pale and fluffy. Gradually add sifted powdered sugar, 1 cup at a time, mixing on low. Add milk, vanilla, and salt. Beat on medium-high for 3 minutes until light and airy. Add 5 drops red and 3 drops blue food coloring; mix well. Adjust color as desired.
  6. Transfer frosting to a piping bag fitted with a round tip. Pipe a generous swirl on each cooled cupcake, starting from the outside and working inward to create a tall peak.
  7. Press 2-3 candy eyeballs into the frosting at different angles. Use black decorating gel to draw silly mouths, zigzag teeth, or eyebrows.
  8. Optional: Sprinkle with green sprinkles or black sanding sugar. Let frosting set for 10 minutes before serving.

Notes

For best results, use room temperature eggs and butter. Sift powdered sugar to avoid lumps. Cool cupcakes completely before frosting to prevent melting. For dairy-free, use vegan butter and plant-based milk. For gluten-free, use a gluten-free chocolate cake mix. Store unfrosted cupcakes in an airtight container for up to 2 days; frosting can be refrigerated for up to 3 days. Decorate the morning of your party for best results.
