These mini turkey meatball lunchbox bowls are the perfect make-ahead meal for busy weeks. Juicy, flavorful meatballs paired with fresh veggies and a simple lemon-Dijon dressing make for a satisfying lunch that comes together in under 40 minutes.

  • 1 pound (450g) ground turkey (93/7 lean-to-fat ratio)
  • 1/2 cup (50g) plain breadcrumbs (Panko preferred)
  • 1 large egg, lightly beaten
  • 1/4 cup (25g) finely grated Parmesan cheese
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for searing)
  • 2 cups (300g) cooked quinoa or brown rice
  • 1 cup (150g) cherry tomatoes, halved
  • 1 cup (100g) cucumber, diced
  • 1/2 cup (75g) bell peppers, diced
  • 2 cups (60g) fresh spinach or mixed greens
  • 3 tablespoons olive oil (for dressing)
  • 2 tablespoons lemon juice (about half a lemon)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground turkey, breadcrumbs, beaten egg, Parmesan cheese, minced garlic, oregano, salt, and pepper. Use your hands to mix gently until just combined, about 30 seconds.
  3. Roll the mixture into 1.5-inch meatballs. You should get about 20 to 24 mini meatballs. Place them on the prepared baking sheet.
  4. Heat olive oil in a large skillet over medium-high heat. Once the oil shimmers (about 2 minutes), add the meatballs in a single layer. Sear for 2 to 3 minutes per side, until golden brown. Work in batches if needed.
  5. Transfer the seared meatballs to the prepared baking sheet. Bake for 12 to 15 minutes, until the internal temperature reaches 165°F (74°C). Let them cool for 5 minutes before assembling the bowls.
  6. While the meatballs bake, prep your bowl ingredients. Cook your quinoa or rice if you haven’t already. Chop the cherry tomatoes, cucumber, and bell peppers. Wash and dry the spinach.
  7. Make the dressing: In a small jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, and a pinch of salt and pepper. Shake or whisk until emulsified, about 30 seconds.
  8. Assemble the bowls: Divide the quinoa or rice evenly among your meal prep containers. Top with spinach, chopped veggies, and 4 to 5 mini meatballs per bowl. Drizzle with dressing just before serving.

Notes

Keep the dressing separate until ready to eat to avoid soggy spinach. For best results, use ground turkey with at least 7% fat. The meatballs taste even better on day two as flavors meld. Can be frozen for up to 3 months.
