  • 1/2 cup raw honey
  • 1 tablespoon dried culinary lavender
  • 1/2 teaspoon ground cardamom
  • 2 tablespoons fresh lemon juice
  • 1/4 cup water

Instructions

  1. Wash peaches thoroughly. Peel by blanching in boiling water for 30 seconds, then transfer to ice water to loosen skins. Chop into 1/2 inch pieces (about 15 minutes).
  2. In a heavy-bottomed saucepan, combine chopped peaches, honey, water, dried lavender, cardamom, and lemon juice. Stir gently to mix.
  3. Bring mixture to a gentle boil over medium heat, stirring occasionally to prevent sticking. Reduce heat to low and simmer uncovered for 35-40 minutes, stirring every 5 minutes until peaches break down and mixture thickens.
  4. Test jam consistency by placing a spoonful on a chilled plate; if it wrinkles and holds shape after a minute, it is done. If not, cook a few more minutes and test again.
  5. Optional: Strain jam through a fine mesh sieve or cheesecloth to remove lavender buds for a smoother texture.
  6. Ladle hot jam into sterilized glass jars, leaving 1/4 inch headspace. Seal jars immediately and let cool to room temperature.
  7. Refrigerate after opening. Jam keeps up to 3 weeks refrigerated or can be frozen for up to 3 months.

Stir often during simmering to prevent scorching. Use fresh lemon juice for best flavor. Peeling peaches is important for smooth texture. Adjust lavender amount carefully to avoid soapy taste. Use maple syrup as a vegan substitute for honey. Frozen peaches can be used if thawed and drained.
