Ingredients

Scale
  • 1 pound salami or pepperoni, sliced thin
  • 8 ounces cheddar cheese, cut into small cubes or triangles
  • 8 ounces pepper jack cheese, cut into small cubes or triangles
  • 1 cup green grapes, washed and dried
  • 1 cup red grapes, washed and dried
  • 1 cup cherry tomatoes, washed and dried
  • 1 cup fresh rosemary sprigs
  • 1 cup mixed olives (green and black), drained and patted dry
  • 1 cup crackers (such as Ritz or Club crackers)
  • 1/2 cup nuts (almonds or pecans), toasted if desired
  • 1/4 cup dried cranberries (optional)

Instructions

  1. Prep your ingredients: Wash and dry the grapes and cherry tomatoes thoroughly. Cut the cheese blocks into small cubes, about half an inch each. If your salami is in a log, slice it into thin rounds. If you bought it pre-sliced, separate the slices so they don’t stick together.
  2. Place your board: Set your cutting board or platter on a flat surface. Make sure it’s clean and dry. If you’re worried about the board sliding, put a damp paper towel underneath it.
  3. Create the wreath base: Arrange the salami slices in a large circle around the outer edge of the board. Overlap them slightly so they form a continuous ring.
  4. Add the cheese: Place the cheese cubes inside the salami ring, arranging them in another circle. Alternate cheddar and pepper jack cubes for color contrast. Leave a gap in the center for decoration.
  5. Fill with grapes and tomatoes: Scatter the green and red grapes around the cheese, followed by the cherry tomatoes. Distribute them evenly so every section has a mix of colors.
  6. Add the rosemary: Tuck the rosemary sprigs into the center of the board, pointing outward like spokes on a wheel. This creates the wreath effect and fills the empty space.
  7. Place the bowls: Set small bowls of olives and nuts in the center of the rosemary sprigs. If you don’t have small bowls, pile the olives and nuts directly on the rosemary.
  8. Add the crackers: Arrange the crackers around the outer edge of the board, outside the salami ring. Fan them out or stack them in small piles.
  9. Finish with dried cranberries: Sprinkle the dried cranberries over the top of the wreath for extra color and sweetness.
  10. Serve immediately: Place the board on your table or counter. If not serving right away, cover loosely with plastic wrap and refrigerate for up to two hours. Remove from the fridge fifteen minutes before serving to let the cheese soften slightly.

Notes

Dry ingredients thoroughly to prevent soggy crackers. Use room temperature cheese for better flavor. Don’t overthink the arrangement; a slightly messy board looks more inviting. Prep ingredients the night before and arrange just before serving. For larger groups, double the recipe or use a larger platter.
