  • 8 oz block of provolone cheese, cold
  • 8 oz block of white cheddar cheese, cold
  • Ghost-shaped cookie cutter (about 2 inches wide)
  • 8 oz salami, sliced
  • 8 oz pepperoni, sliced
  • 1 cup mixed olives (green and kalamata)
  • 1/2 cup pickled gherkins or cornichons
  • 1/2 cup roasted red peppers, sliced
  • 1 cup candy corn
  • 1/2 cup candy pumpkins
  • 1/2 cup dark chocolate chips or small chocolate bars
  • 1/2 cup dried cranberries or cherries
  • 1 box of buttery crackers (like Ritz or Club crackers)
  • 1 box of pretzel sticks or twists
  • 1 cup of mixed nuts (salted almonds and cashews)
  • Fresh rosemary sprigs
  • Fresh thyme sprigs
  • Small edible flowers (optional)

Instructions

  1. Make the Cheese Ghosts (10 minutes): Take your cold mozzarella, provolone, and white cheddar blocks. Using a sharp knife, slice them into 1/4-inch thick slabs. Press the ghost-shaped cookie cutter firmly into each slab. Gently push the ghost out with your fingers or the offset spatula. Repeat until you have about 12-15 ghosts. Place them on a plate and refrigerate until you’re ready to assemble.
  2. Prepare the Savory Items (5 minutes): Fold the salami and pepperoni slices into quarters or roll them into little cones. Drain the olives and pickles, and pat them dry with a paper towel. Slice the roasted red peppers into thin strips.
  3. Arrange the Board (10 minutes): Place your large board on a clean surface. Start by putting the small bowls of olives, pickles, and roasted red peppers in the corners or along the edges. Next, arrange the cheese ghosts in a cluster in the center. Surround them with the folded salami and pepperoni.
  4. Add the Sweets and Crunch (5 minutes): Sprinkle the candy corn and candy pumpkins around the ghosts. Arrange the crackers and pretzel sticks in small piles around the board. Scatter the mixed nuts and dried cranberries in the gaps.
  5. Garnish and Serve (5 minutes): Tuck the rosemary and thyme sprigs between the items to look like little trees. If using, place the edible flowers in a few spots for color. Serve immediately, or cover loosely with plastic wrap and refrigerate for up to 2 hours. Let it sit at room temperature for 15 minutes before serving.

Notes

Keep the cheese cold for best results when cutting shapes. The cheese ghosts will soften at room temperature after about 30 minutes. For a gluten-free option, swap crackers for rice cakes or gluten-free pretzels. For a vegan board, use firm vegan cheese blocks.
